Kim Bap

Ingredients (2 servings)
10 oz fresh flat-leaf spinach
2 T Soy Sauce
1 t Sugar
1 1/2 t sesame seeds
1/2 t sesame oil
1 T minced green onion
1 t vinegar (optional)
salt to taste
Red pepper flakes (optional)
Method
- Wash and trim roots from spinach.
- In a bowl, combine soy sauce, sugar, sesame seeds, sesame oil, green onion, and
vinegar to make a sauce.
- Bring a large pot of water to boil. Add spinach and let boil just long enough for
leaves to turn bright green. Drain and rinse immediately in cold water. Then
squeeze out as much water as possible from spinach. Place in bowl with soy sauce mixture
and toss.
- Serve cold, topped with pepper flakes.
